Here are some easy peasy recipes of mine, that are super yummy and usually Fast & Easy!

Just made the most bomb, diggity bbq sauce EVER, if I do say so myself!
Now to just rmemeber what I did exaclty, and I'll share . . .
time to eat it first!
Here it is!

Sweet smoky BBQ Chicken Sandwiches
2 Chicken breasts - boiled and shredded (I boil mine with some salt and a dash of cooking oil to keep the chicken moist)
grilled/toasted Hamburger buns (I butter the insides and grill in skillet (like a grilled cheese sandwich)
don't forget cider vinegar, water and buns!

In a pot, add cooked chicken and the sauce ingredients below:
2 cups of Ketchup
1/2 cup of packed Brown sugar
1/4 tsp Liquid smoke
1 package dried Onion soup mix
1 tsp Worcestershire sauce
1/4 cup Cider vinegar
1/2 - 1 cup water (for desired consistency)

Simmer on low, stirring often (will burn easily if left too long)
Serve over grilled buns!

Chicken Pockets

I have to let my daughter use the computer for homework!  UGH!  Haha
I'll be back and put up the recipe today!
Super easy and really yummy!
Preheat oven to 350
1 chicken breast, boiled & finely shredded
1 can cream of chicken soup (I use the one flavored with herbs)
2 green onions - chopped
5 petite carrotts chopped in small pcs
1 stick of celebry chopped small
1 large dollop (~Tablespoon) cream cheese
1 can Pillsbury cresents (8)
Packet of chicken gravy mix (your choice)

Seasoning I love!

Seasoning : I use McCormick Rotisserie Chicken

Mix 1/2 can of soup, all the carrots, onions, celery, cream cheese, chicken & seasoning

Open package of cresents and lay out on greased cupcake pan

Drop large spoonfulls of chicken mixture into each crescent

Start wrapping the dough around, pinch, stretch and whatever you need to do to get the "pocket" to close.
Gets a little messy, and no real right or wrong, just try to keep it seamed up so it doesn't ooze out when baking.

After you have the pocket all filled and closed, turn the seams to the bottom

Bake at 350 for 18 minutes - until golden brown

Mix up gravy as directed by packet AND add that other 1/2 of the soup left over from mixture

Serve with gravy and side dishes!

Oven Baked Hard Boiled Eggs!!
Yes, it REALLY works!!
I looked at a lot of different sites and Pinterest and heres' what worked for me:
Everyone suggests, and I agree, to sample a few first to check your oven temp.
Preheated oven to 350 (new ovens might work at 325)
Put eggs in muffin tins (no water, nothing) (I also put one directly on the shelf - worked fine)
Bake at 350 for 30 mins.
Scoop out with a big soup spoon/tongs into ice water - let sit for 10 mins minimum.
Peeled easily and were Delish!!

Easy Peasy Yummy Buttery Baked Chicken
Buttery Chicken
I use boneless, skinless breasts, but any chicken will do.

3 chicken breasts, cut into 4 strips

2 rolls buttery round crackers (Ritz) - crushed up fine (just use your hands or put in a big bag.
2 eggs beaten
1 stick of butter
3 green onions chopped
Dip the chicken in to the eggs
Roll and press into the crumbs

arrange in a baking pan all packed touching

cut butter into small squares and lay all around chicken
Bake at 375 for 40 mins - then sprinkle green onion and bake another 5 mins.
Number of servings are dependent on how you slice the chicken.
These are great for pot lucks, parties, bbq's or just a nice easy lunch or dinner.
Chicken Salad Sandwiches

 This is a light and refreshing salad mixture that whips up quick and easy and is deliciously savory. I use either a boiled shredded chicken breast, canned chicken, or half of a rotisserie chicken shredded, that's my favorite.  There is not exact quantities or measurements, just go with the basic and add or take what you wish. 
 No way to mess this up!
I don't even season it, as the ingredients do that on their own.

Chicken Salad Sandwich mix 
2 cups cooked, shredded chicken (rotisserie, boiled or canned)
1 can water chestnuts, chopped fine
1 celery stalk, chopped fine
2 green onions chopped (include chives)
1/4 cup chopped sweet onion 
1/2 cup of red seedless grapes, cut into quarters
1/4 cup cilantro chopped fine
1/2 cup Mayo/Miracle Whip (=/- depending on your taste and desired consistency)
Mix all the the above ingredients together, adding or using less Mayo as desired
8-10 small fresh crescents (could use Pita pockets too)

Cut crescents in half and stuff full.
